Interpreting Sam as non-straight doesn’t make you any more invested in representation than someone who interprets Dean as non-straight.

The reason Dean is probably more popularly interpreted as non-straight is because there’s just a lot more in canon to work with when forming the interpretation.  Plain and simple, we’ve seen him form close attachments with other men much more often than we have Sam do so, we’ve seen him interact with those other men more often than we’ve seen Sam do so, and we’ve seen him in situations where his sexuality is brought up/questioned much more often than we have Sam’s.  That generates a lot more material for discussion.

And much of Dean’s characterization rests on a lot of dishonesty, self-hatred and macho posturing, all things that dovetail very nicely with a later-in-life coming out story.  Sam’s characterization is kind of the opposite.  Sam has always been characterized as doing what he wants even if what he wants is not popular (going to college, accepting his powers and working with Ruby, not seeing monsters in such a black-and-white way, not wanting to hunt, not buying into his father’s or Dean’s “macho crap”).  In fact, I’m fairly sure that there’s an instance in canon (Scarecrow, I believe) where Dean actually tells Sam that he’s jealous of Sam’s ability to be his own man and think for himself.  So while I wouldn’t say that a later-in-life coming out story arc would be impossible to build with Sam, in my opinion it doesn’t gel as well with his overall characterization as it does Dean’s and might not be as relatable for people who are struggle with self-acceptance.  Thus, a coming out storyline for Dean is more popular.

This doesn’t mean that an interpretation of Sam as non-straight is unrelatable or without evidence.  Just that there are reasons beyond shipping (I don’t like Destiel, for the record) that interpretations of Dean as bisexual are much more popular and widespread. And those reasons very likely have everything to do with representation and wanting to see a story told that generally never is.

Usually they’re not arguing for queer Sam (which I find interesting, love reading about queer headcanons) but against bi Dean with “What about Sam?!?!?!”

Reason people say Sam is queer over Dean is because he’s never canonly come out as straight and Dean has. He’s said it...
